Taiwan deserves its moniker as the “Kingdom of Fruit,” and expectations are high when the uninitiated lay eyes on the outsized avocados. But all too often, there is disappointment in the eating, as the size makes it difficult to judge the ripeness, and that typical creamy Hass flavour people expect is somehow watered down.
But Taiwan has over 30 varieties of avocado, and ones like the Hongxinyuan are full of flavour and have that silky, soft texture, almost like tofu. Paired with our slightly sweet and very pink Beetalicious Hummus, it’s a sight to behold.
And there is definitely no disappointment in the eating!


Ingredients
100g Hippidippi Beetalicious Hummus
1 Hongxinyuan avocado
2 slices of sourdough bread
Salt & pepper, to taste
Fresh herb of choice
Instructions
1. Spread a generous amount of hummus on the bread.
2. Gently peel and cut avocado in half, slice to desired thickness, then load onto the hummus.
3. Season with salt and pepper, and any fresh herb of choice. We used fresh thyme.
