Hummus is so versatile, and this creamy, oil-free, salad dressing is delicious, healthy, super easy to make, and equally great drizzled on sandwiches and grilled vegetables.
Ingredients
1/4 cup almond milk, or other plant-based milk
2 tsp lemon juice
3 tbsp hummus
3/4 tsp dijon mustard
1 tbsp fresh dill, chopped
1/4 tsp garlic powder
1 pinch onion powder
Salt and pepper, to taste
Method
*In a small bowl, combine almond milk and lemon juice together and set aside to curdle.
*In another bowl, mix hummus, Dijon mustard, dill, garlic powder, and a pinch of onion powder together.
*Slowly stir in almond milk into the hummus mixture until you get the desired consistency.
*Taste, adding more dill and/or salt and pepper as desired.
*Refrigerate for up to a week.
