Hummus Formosa Nori Rolls

Hummus is so versatile, it’s easy to venture beyond simply using it as a spread for bread or a dip for chips!


Here we lean into Japanese cuisine with some crunchy nori rolls that scream for some of the creamy, lemony goodness of Hummus Formosa. They’re light but filling, easy to take out and about, and perfect for summer when it’s too hot for anything cooked.

Ingredients

1 sheet of nori

2 tbsp Hummus Formosa

1/4 cup carrots, julienned (sliced into thin strips, innit)

1/4 cup cucumber, julienned

1/4 cup sweet pea shoots or cress

1/4 avocado, thinly sliced

Butter lettuce leaves

1 tsp lemon juice

Salt and pepper to taste


Instructions

1. Place the nori sheet on a bamboo nori mat or tea towel on a countertop.

2. Carefully spread the hummus in a thin layer over the entire nori sheet. 

3. Arrange the carrot and cucumber sticks, cress, lettuce and avocado on the bottom third/half of the nori sheet closest to you.

4. Sprinkle with lemon juice, salt and pepper.

5. Using the mat or tea towel, gently roll the closest side toward the center and into a roll. 

6. Use a sharp knife to cut into bite-size pieces.
