Hummus on Roasted Sweet Potatoes

Hot roasted sweet potatoes topped with Hippidippi's Classic Hummus? Say no more!

Well, OK, just that this is the ultimate way to load up with healthy carbs and plant-based protein, and makes for a deliciously easy meal option any day of the week.

Ingredients (2 servings)
* 1/2 container Hippidippi Classic Hummus
* 2 medium sweet potatoes
* 1 1/2 tbsp butter
* Salt and pepper
* Extra virgin olive oil
* Pine nuts or any other nuts
* Basil or coriander (cilantro)

Instructions
* Preheat the oven to 200°C (390°F), poke holes in the sweet potatoes with a fork, and bake on parchment paper for 40-50 minutes until the sweet potatoes are completely cooked (or just buy a couple of baked sweet potatoes from your nearest convenience store!)
* Cut the sweet potato in half, being careful not to scald yourself, and scoop out the flesh with a spoon
* In a small bowl, mash the flesh with butter and season to taste
* Stuff the mashed sweet potato back into the skins
* Top with hummus, pine nuts, a little olive oil, and basil or coriander
