We ditch the mayonnaise used in traditional potato salad for our Classic Hummus which, unlike most mayonnaise, is additive-free and low in saturated fats. Hummus is less tangy, allowing the other various flavours to shine. We don’t think you’ll miss the mayo, and your waistline will thank you!
This makes a great side dish, but here we decided to use lettuce freshly picked from our lovely neighbour’s garden to make the pictured wraps.


Ingredients
1/2 container Classic Hummus
500g potatoes, peeled or washed if skin on, cut into chunks
1/2 cup combination of cucumbers or red/yellow peppers, tomatoes, celery, chopped
1/4 cup combination of chopped yellow and green onions
1/4 cup parsley, coriander (cilantro) or dill, chopped
Salt and pepper, to taste
Lettuce leaves
Instructions
1. Peel the potatoes or wash well if you prefer to leave skin on. Place in a pan with water, bring to boil, and cook until done (15-20 minutes).
2. Wash and chop cucumbers, peppers, tomatoes, celery, onions, and herbs. Combine in a bowl.
3. Add potatoes and hummus to the bowl, season with salt and pepper, and mix gently until everything is well combined.
4. Spoon the mixture onto the lettuce leaves and wrap.
