Mango Salad with Roasted Red Pepper Hummus

This salad is a last “hurrah!” for summer while there are still some mangoes out there. So hurry before the autumn sets in and they all disappear!


You’ll be rewarded with a salad that is oh-so-sweet and juicy, and a great way to balance your diet. 


Enjoy assembling this colourful and flavourful dish before it, too, inevitably disappears!



Ingredients

100g Hippidippi Roasted Red Pepper Hummus

Mixed lettuce and rocket, washed and dried 

1 ripe mango, medium diced

Some sliced onions

1/3 cup sunflower seeds

Pita or any bread of choice


Instructions

Place the mixed greens on a plate, and a large dollop of Roasted Red Pepper Hummus in the middle. Add the mango and onion, sprinkle with sunflower seeds, and serve with some bread!
