Muhammara with Roasted Cauliflower

Crudités may be the simplest and healthiest option for dipping, but some veggies are just crying out to be roasted. Enter cauliflower, which takes on a nutty sweetness and golden glow when roasted.


Ingredients
  • Hippidippi Muhammara
  • 1 head of cauliflower
  • Olive oil
  • Paprika
  • Salt and pepper
  • Parsley (optional)
  • Chopped walnuts (optional)
Instructions
  1. Preheat oven to 200C and line a baking tray with parchment paper or foil
  2. Cut the cauliflower into florets, place on tray and coat with olive oil
  3. Season with paprika, salt and pepper
  4. Roast until just tender and lightly browned, 15-20 mins
  5. Place Muhammara in a bowl , garnish with parsley and chopped walnuts
  6. Serve!
