Crudités may be the simplest and healthiest option for dipping, but some veggies are just crying out to be roasted. Enter cauliflower, which takes on a nutty sweetness and golden glow when roasted.
Ingredients
- Hippidippi Muhammara
- 1 head of cauliflower
- Olive oil
- Paprika
- Salt and pepper
- Parsley (optional)
- Chopped walnuts (optional)
Instructions
- Preheat oven to 200C and line a baking tray with parchment paper or foil
- Cut the cauliflower into florets, place on tray and coat with olive oil
- Season with paprika, salt and pepper
- Roast until just tender and lightly browned, 15-20 mins
- Place Muhammara in a bowl , garnish with parsley and chopped walnuts
- Serve!
