We have much room for mushrooms in our dish rotations, and this is another of our faves!
Sliding food onto skewers isn’t part of our everyday repertoire of cooking methods, so it feels out of the ordinary, and actually kind of fun!
And the end result? Tender kebab-style oyster mushrooms with a creamy, nutty, and herby explosion of flavour for you to savour!


Ingredients
100g Hippidippi Jungle Green
Oyster mushrooms (other types would work, like shiitake)
Olive oil
Salt and pepper to taste
Wooden skewers, soaked in water for a few minutes to prevent burning
Instructions
1. Heat oven to 200C (390F).
2. Wipe the mushrooms clean with a damp paper towel. Slice thinly and build the skewers by packing them tightly – they will shrink when cooked, so pack them on!
3. Brush with olive oil, and season with salt and pepper.
4. Carefully place the skewers on an oven tray and cook for 4-5 minutes on each side until golden brown.
5. Plate and dribble over generous amounts of Jungle Green.
