This delightfully quick pasta salad with its tantalizing hummus dressing is the perfect addition to your summer menu.
It comes together effortlessly, so you can spend less time in the kitchen and more time enjoying those other things that make you happy!
We went with red lentil pasta, a protein-rich, low-carb, and gluten-free alternative to wheat. Feel free to mix and match the salad ingredients with whatever is available. Either way, the creamy hummus dressing adds a velvety texture and a scrumptious burst of flavour.
Ingredients
80g of pasta of choice (we used Bartolini red lentil spiral pasta)
80g of kale, chopped
1/2 pearl onion, thinly sliced
1/2 tomato, thinly sliced
1 cherry radish
3-4 olives, halved
Fresh basil, to garnish
Hummus Dressing
1/2 container Hippidippi Classic Hummus
2 tbsp lemon juice
1 tbsp Dijon mustard
Sea salt and ground black pepper, to taste
2 tbsp water
Method
1. Bring a pan of salted water to the boil and then cook pasta until al dente (follow times on pasta pack). Remove from water and let cool.
2. While pasta is cooking, chop and slice salad ingredients.
3. Mix all the dressing ingredients in a bowl. Whisk until combined.
4. Toss everything together and serve!
